Apple Cinnamon Muffins

Instructions
Preparation Steps
Preheat the oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners or grease lightly.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
In another bowl, whisk the melted butter, egg, milk, and vanilla until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
Fold in the diced apples mixed with lemon juice.
Divide the batter evenly among the prepared muffin cups, filling each about ½ full.
Sprinkle the tops of the muffins with a little extra sugar for a golden finish.
Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
These muffins are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days.
