Apple Cinnamon Muffins

Moist and fluffy apple cinnamon muffins with a tender crumb, spiced with cinnamon and studded with fresh apple chunks. Perfect for breakfast or a sweet snack.

Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt

Wet Ingredients

  • 0.5 cup unsalted butter, melted and cooled slightly
  • 1 large egg
  • 0.33 cup milk (whole or 2%)
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup peeled and finely diced apples (about 1 medium apple)
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar (for sprinkling on top)

Preparation Steps

  • Preheat the oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners or grease lightly.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk the melted butter, egg, milk, and vanilla until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  • Fold in the diced apples mixed with lemon juice.
  • Divide the batter evenly among the prepared muffin cups, filling each about ½ full.
  • Sprinkle the tops of the muffins with a little extra sugar for a golden finish.
  • Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

These muffins are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days.
