Amish pot roast

A classic and hearty Amish pot roast recipe, perfect for a family dinner.

  • 1.5 pounds Beef chuck roast
  • 1 large Yellow onion chopped
  • 2 medium Carrots peeled and cut into chunks
  • 2 medium Celery stalks chopped
  • 0.5 cup Beef broth
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Preparation Steps

  • Preheat oven to 325 degrees F (160 degrees C).
  • Season the beef chuck roast with salt and pepper.

  • Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the roast on all sides until browned.

  • Remove roast from the pot and set aside. Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.

  • Return the roast to the pot. Pour in beef broth and sprinkle with dried thyme.

  • Cover the pot and transfer to the preheated oven. Cook for 3 to 4 hours, or until the roast is fork-tender.
  • Remove roast from the pot and let it rest for 10 minutes before slicing. Serve with vegetables and cooking juices.

Notes

This pot roast is best served with mashed potatoes or egg noodles.
