Instructions
Preparation Steps
Season the chuck roast generously with salt, pepper, and thyme.
Place the onion in the bottom of a large pot or Dutch oven.
Place the seasoned chuck roast on top of the onion.
Pour the beef broth into the pot.
Bring to a boil, then reduce heat to low, cover, and simmer for 3 hours, or until the roast is fork-tender.
Notes
Serve with mashed potatoes or your favorite side dishes.
