Almond Cherry Cookies

Soft, chewy cookies with a delightful almond and dried cherry flavor, perfect for afternoon tea or holiday baking.

  • 2 cups unsalted butter, softened
  • 0.5 cup granulated sugar
  • 0.5 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup sliced almonds, toasted
  • 1 cup dried tart cherries
  • 1 teaspoon almond extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract and almond extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the toasted sliced almonds and dried tart cherries until evenly distributed.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 12–15 minutes, or until edges are lightly golden but centers still look soft. Do not overbake.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to one week, or freeze for longer storage.
