Slice the baby potatoes in half and cut the onion into large chunks.
Place the potatoes and onion in a gallon-size zip-top bag with the oil, seasoned salt, garlic powder, and black pepper. Seal and toss until evenly coated.
Spray the basket of a 6-quart air fryer with nonstick cooking spray.
Add the coated potatoes and onion to the basket and air-fry at 400°F for about 15 minutes, shaking the basket halfway through.
While the potatoes cook, cut the smoked sausage into 1-inch slices.
After the potatoes have cooked for 15 minutes, add the sausage and cook for 5 minutes more.
Sprinkle with dried parsley and serve with honey mustard, ketchup, or barbecue sauce if desired.
Notes
Use fully cooked smoked sausage rather than raw sausage.
