Preparation Steps
Preheat the air fryer to 375°F (190°C).
In a bowl, mix shredded chicken with buffalo sauce until well coated.
Place a spoonful of the chicken mixture in the center of each egg roll wrapper. Add a sprinkle of blue cheese if desired.
Fold the sides and roll up the wrappers tightly. Seal the edges with a dab of water.
Lightly spray the rolled egg rolls with cooking spray and place in the air fryer basket.
Cook for 10 minutes or until crispy and golden brown, turning halfway through.
Notes
Serve with additional buffalo sauce or ranch dressing for dipping.
