7-Up Pound Cake

A moist and delicious pound cake made with 7-Up for a unique twist.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup 7-Up
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the 7-Up, beginning and ending with the dry ingredients. Mix until just combined.
  • Pour batter into the prepared pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool completely before frosting or serving.

Notes

This cake is best served at room temperature. You can add your favorite frosting or glaze.
