7 Steps to Creamy Perfection: How to Make Chicken Rose Pasta!

This delightful pasta dish features tender chicken in a creamy, slightly tangy sauce, perfect for any day of the week.

Ingredients
  

Chicken

  • 3 pieces boneless, skinless chicken breasts pounded to 1/4-inch thickness
  • 2 tablespoons olive oil divided
  • 2 tablespoons herb seasoning
  • salt and freshly ground black pepper to taste

Pasta and Sauce

  • 1.5 pounds penne pasta or your preferred short pasta
  • 6 tablespoons olive oil divided
  • 8 cloves garlic minced
  • 1 can crushed tomatoes 14-ounce
  • 0.5 cup chicken broth
  • 2.5 cups heavy cream
  • 1.25 cups Parmesan cheese freshly grated, plus extra for topping
  • 0.5 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon crushed red pepper flakes optional
  • Salt and black pepper to taste
  • 0.25 cup fresh parsley chopped, for garnish
  • 1 cup reserved pasta water

Instructions
 

Preparation Steps

  • Boil a large pot of salted water.
  • Season the chicken with 1 tablespoon of olive oil, herb seasoning, salt, and pepper.
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat, cook chicken until browned and cooked through, about 5 minutes per side.
  • Cook pasta to al dente according to package instructions, reserve pasta water and drain.
  • In a skillet over medium heat, warm 5 tablespoons olive oil, sauté garlic until golden and fragrant.
  • Mix in crushed tomatoes, chicken broth, and heavy cream. Simmer and stir until smooth.
  • Add in Parmesan, oregano, basil, pepper flakes, salt, and pepper. Let simmer to thicken.
  • Slice cooked chicken and combine with pasta in the sauce, tossing well. Adjust thickness with reserved pasta water if needed.

Notes

Add parsley and extra cheese before serving.
