  • Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large bowl, cream together peanut butter, butter, brown sugar, and granulated sugar using a mixer until smooth and creamy.
  • Add the eggs and vanilla extract to the mixture, beating until fully combined.
  • In another bowl, whisk together flour, baking powder, and salt. Gradually add this to the wet mixture, mixing until just combined.
  • Scoop tablespoon-sized balls of dough and place them on the prepared baking sheets, about 2 inches apart.
  • Press each dough ball slightly with a fork to create a crisscross pattern.
  • Bake for 8-10 minutes until the edges are golden. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
