Preparation Steps
Season the beef cubes with salt and pepper. Heat 2 tablespoons of vegetable oil in a skillet and brown the beef evenly.
Transfer the beef to a slow cooker. In the same skillet, pour in red wine to deglaze, scraping up all the stuck bits.
Add all remaining ingredients except peas, cornstarch, and water to the slow cooker. Stir to combine.
Cover and cook on low for 8 hours or on high for 4 hours.
To thicken the stew, whisk the cornstarch with cold water, then stir into the slow cooker 30 minutes before serving.
Stir in the frozen peas, cover, and let cook for an additional 15 minutes.
