  • 3 lbs beef chuck roast cut into 1-inch cubes
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 tbsp vegetable oil divided
  • 1 cup red wine
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 6 carrots peeled and sliced
  • 1 lb baby potatoes halved
  • 1 cup frozen peas
  • 2 tbsp cornstarch
  • 0.5 cup cold water

Preparation Steps

  • Season the beef cubes with salt and pepper. Heat 2 tablespoons of vegetable oil in a skillet and brown the beef evenly.
  • Transfer the beef to a slow cooker. In the same skillet, pour in red wine to deglaze, scraping up all the stuck bits.
  • Add all remaining ingredients except peas, cornstarch, and water to the slow cooker. Stir to combine.
  • Cover and cook on low for 8 hours or on high for 4 hours.
  • To thicken the stew, whisk the cornstarch with cold water, then stir into the slow cooker 30 minutes before serving.
  • Stir in the frozen peas, cover, and let cook for an additional 15 minutes.
