  • 1 cup almond butter natural and unsweetened
  • 0.5 cup coconut oil melted
  • 0.5 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 egg large
  • 1.5 cups almond flour sifted
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.75 cup dark chocolate chips divided

Preparation Steps

  • In a large mixing bowl, whisk together almond butter and melted coconut oil until smooth.
  • Add honey, vanilla extract, and eggs. Mix until fully combined.
  • In a separate bowl, combine almond flour, baking powder, and salt.
  • Gradually integrate dry ingredients into the wet mixture, stirring until just mixed. Avoid overmixing.
  • Stir in half of the chocolate chips and chill the dough for 10 minutes in the refrigerator.
  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Shape dough into small balls and place on the sheet with space in between. Press each ball slightly flat.
  • Sprinkle remaining chocolate chips on top of the cookies.
  • Bake for 12-15 minutes or until edges turn golden. Cool on a rack before serving.

Notes

These cookies are a healthier treat option and are naturally gluten-free because of the almond flour.
