Instructions
Preparation Steps
In a large mixing bowl, whisk together almond butter and melted coconut oil until smooth.
Add honey, vanilla extract, and eggs. Mix until fully combined.
In a separate bowl, combine almond flour, baking powder, and salt.
Gradually integrate dry ingredients into the wet mixture, stirring until just mixed. Avoid overmixing.
Stir in half of the chocolate chips and chill the dough for 10 minutes in the refrigerator.
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Shape dough into small balls and place on the sheet with space in between. Press each ball slightly flat.
Sprinkle remaining chocolate chips on top of the cookies.
Bake for 12-15 minutes or until edges turn golden. Cool on a rack before serving.
Notes
These cookies are a healthier treat option and are naturally gluten-free because of the almond flour.
