Ingredients

  • 1 lb (450g) ground breakfast sausage
  • 2 cups (240g) shredded cheddar cheese
  • 1 1/2 cups (180g) Bisquick baking mix
  • 4 large eggs
  • 1/4 cup (60ml) milk
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Directions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin or line it with paper liners.
  2. Cook Sausage: In a skillet, cook the breakfast sausage over medium heat until browned and fully cooked. Drain any excess grease and set it aside to cool slightly.
  3. Mix Wet Ingredients: In a medium bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  4. Combine: In a large mixing bowl, combine the cooked sausage, shredded cheddar cheese, and Bisquick. Pour the egg mixture into the bowl and stir until well combined.
  5. Fill Muffin Cups: Evenly spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake: Bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  7. Cool and Serve: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack. Serve warm or store for later.

Notes

  • Substitutions: Swap out cheddar for Monterey Jack or pepper jack for a spicy twist.
  • Make Ahead: These muffins freeze well! Let them cool completely, then store in an airtight container in the freezer for up to 3 months. Reheat in the microwave or oven.
  • Vegetarian Option: Replace sausage with sautéed vegetables like mushrooms, spinach, or bell peppers for a veggie-packed alternative.
  • Customizable: Add diced jalapeños, green onions, or your favorite seasonings to elevate the flavor.

Perfect for breakfast, brunch, or even a quick snack, these Sausage Breakfast Muffins are a crowd-pleaser that you’ll want to make again and again!
