Ingredients

For the casserole

  • 1 lb (450 g) ground beef
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 cup uncooked long-grain white rice
  • 1 ½ cups beef broth
  • 1 can (10.5 oz / 300 g) cream of mushroom soup
  • 1 can (10.5 oz / 300 g) cream of chicken soup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Topping

  • 1 ½ cups shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional)

Directions

Cook the beef

  1. Preheat your oven to 350°F (175°C).
  2. Heat a large skillet over medium heat. Add the ground beef and diced onion, cooking until the beef is browned and the onion is soft, about 5-7 minutes. Drain excess fat.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Assemble the casserole

  1. In a large mixing bowl, combine the cooked beef mixture, uncooked rice, beef broth, cream of mushroom soup, cream of chicken soup, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix well until fully combined.
  2. Transfer the mixture into a greased 9×13-inch (23×33 cm) baking dish and spread it out evenly.

Bake

  1. Cover the dish tightly with aluminum foil and bake in the preheated oven for 50-55 minutes, or until the rice is tender and the casserole is bubbling.
  2. Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake uncovered for an additional 10-15 minutes, until the cheese is melted and bubbly.

Serve

  1. Let the casserole rest for 5-10 minutes before serving. Garnish with fresh parsley if desired, and enjoy!

Notes

  • Rice type: If using brown rice, increase the cooking time by 10-15 minutes and add ½ cup more broth.
  • Protein swap: You can use ground turkey or chicken instead of beef for a lighter option.
  • Vegetables: Add some frozen peas or mixed vegetables for extra nutrition and color.
  • Make ahead: Assemble the casserole ahead of time, cover, and store in the refrigerator for up to 24 hours before baking.

Conclusion

This Hamburger Rice Casserole is a family-friendly dish that’s simple to prepare and loaded with flavor. Whether you’re craving a hearty weeknight meal or looking for an easy potluck dish, this casserole ticks all the boxes. It’s warm, cheesy, and oh-so-satisfying – give it a try and watch it become a regular on your dinner menu!
