Directions

  2. Form the Fritters: Using your hands or a spoon, form the chicken mixture into small patties, about 2 inches wide and 1 inch thick.
  3. Fry the Fritters: Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the chicken fritters in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes per side, or until golden brown and crispy.
