Savory Chicken, Corn, and Cheddar Bake

An easy-to-make casserole featuring juicy chicken, sweet corn, and bubbly cheddar cheese, perfect for family gatherings.

  • 3 cups cooked chicken diced or shredded
  • 2 cups corn kernels fresh or frozen
  • 2 cups cheddar cheese shredded and divided
  • 1.5 cups cream cheese softened
  • 1 cup crushed crackers such as Ritz
  • 1 cup milk
  • 4 tablespoons butter divided
  • 4 cloves garlic minced
  • 1 tsp paprika
  • Salt and pepper to taste

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • In a saucepan over medium heat, melt 2 tablespoons of butter and sauté the minced garlic until fragrant.
  • Stir in the cream cheese and milk, and cook until smooth and thickened.
  • In a large bowl, combine the chicken, corn, half the cheddar cheese, and prepared sauce. Mix well.
  • Transfer the mixture to a greased 9x13-inch baking dish.
  • Melt the remaining butter and combine with crushed crackers and paprika. Spread evenly over the casserole.
  • Top with remaining cheddar cheese and bake for 30-35 minutes or until cheese is bubbly and golden.

Notes

Let the casserole rest for 5 minutes before serving for best texture.
