  • 1.5 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 can diced tomatoes undrained, 14.5 ounce
  • 1 can artichoke hearts drained and chopped, 14 ounce
  • 1 cup Kalamata olives pitted and sliced
  • 0.5 cup feta cheese crumbled
  • 0.25 cup olive oil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add chicken pieces and cook until lightly browned.
  • Stir in diced tomatoes, artichoke hearts, Kalamata olives, oregano, garlic powder, salt, and pepper. Bring to a simmer.
  • Transfer the mixture to a 9x13 inch baking dish.
  • Sprinkle feta cheese evenly over the top.
  • Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and lightly golden.
  • Let stand for a few minutes before serving.

Notes

Serve hot with your favorite side dishes like rice, couscous, or a fresh salad.
