Ingredients

  • 1 lb (450 g) breakfast sausage
  • 1 small onion, finely chopped
  • 6 large eggs
  • ½ cup (120 ml) milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups (200 g) shredded cheddar cheese
  • 1 bag (32 oz / 900 g) frozen tater tots

Directions

Cook the sausage

  1. In a large skillet over medium heat, cook the sausage and chopped onion until the sausage is browned and fully cooked. Drain excess fat and set aside.

Prepare the egg mixture

  1. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until well combined.

Assemble the casserole

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish. Spread the cooked sausage mixture evenly over the bottom of the dish.
  3. Sprinkle half of the shredded cheddar cheese over the sausage layer.
  4. Pour the egg mixture over the sausage and cheese.
  5. Arrange the tater tots in a single layer on top of the egg mixture.

Bake

  1. Bake in the preheated oven for 35-40 minutes, or until the eggs are set, and the tater tots are golden and crispy.
  2. Sprinkle the remaining cheddar cheese on top and bake for an additional 5 minutes until the cheese is melted.

Serve

  1. Let the casserole cool slightly before slicing. Serve warm and enjoy!

Notes

  • Meat options: You can substitute the sausage with bacon or diced ham.
  • Vegetarian version: Omit the sausage and add sautéed veggies like bell peppers, spinach, or mushrooms.
  • Make ahead: Assemble the casserole the night before, cover it tightly, and refrigerate. Bake it fresh in the morning for a quick breakfast!
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.

Conclusion

This Tater Tot Breakfast Casserole is the perfect make-ahead breakfast dish for busy mornings or special occasions. With its crispy tater tots, melty cheese, and savory sausage, it’s guaranteed to please everyone at the table. Try it out for your next family brunch!
