Taco Lasagna Recipe

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup salsa
  • 8 flour tortillas (about 8-inch size)
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup sour cream
  • 1 cup refried beans
  • 1 cup black beans, drained and rinsed (optional)
  • 1 small can (4 oz) sliced jalapeños (optional, for added heat)
  • Fresh cilantro, chopped (for garnish)

Directions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Meat: In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft, about 5-7 minutes. Drain any excess fat. Stir in the taco seasoning, diced tomatoes with green chilies, and salsa. Simmer for 5 minutes, then remove from heat.
  3. Prepare the Layers: In a separate bowl, mix the sour cream and refried beans together until smooth. Set aside.
  4. Assemble the Lasagna:
    • In a 9×13-inch baking dish, spread a small amount of the meat mixture on the bottom.
    • Add a layer of tortillas on top of the meat mixture, covering the entire surface.
    • Spread half of the sour cream and refried bean mixture over the tortillas.
    • Sprinkle with half of the shredded cheddar and mozzarella cheeses.
    • Repeat the layers: add the remaining meat mixture, followed by another layer of tortillas, the rest of the sour cream mixture, and the remaining cheese.
  5. Bake the Lasagna: Cover the baking dish with aluminum foil and bake for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Serve: Remove from the oven and let the lasagna cool for a few minutes. Garnish with chopped fresh cilantro and sliced jalapeños, if desired.

Notes

  • Taco Variations: Feel free to switch up the protein! Ground turkey, chicken, or even a vegetarian version with black beans and vegetables will work perfectly.
  • Cheese Options: You can use other types of cheese, such as pepper jack or Mexican blend, for an extra kick of flavor.
  • Make Ahead: This dish can be assembled ahead of time and stored in the fridge for up to 24 hours before baking. Just cover tightly with foil and bake when ready.
  • Spice Level: Adjust the spiciness by using mild salsa and omitting the jalapeños, or for extra heat, use a spicy taco seasoning and add more jalapeños.

  • 9 pieces no-boil lasagna noodles
  • 2 cups salsa mild or spicy
  • 2 cups shredded cheese blend Mexican blend

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning and 3/4 cup of water. Simmer for 5 minutes.
  • In a baking dish, layer the ingredients: start with salsa, add noodles, then beef mixture, and cheese. Repeat the layers until you have used all ingredients.
  • Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes or until cheese is bubbly.

Notes

Feel free to add your favorite toppings like sour cream, guacamole, or jalapeños.
