  • 1 lb ground beef

  • 1 can (14 oz) tomato sauce
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • ¾ cup uncooked white rice
  • 1 tbsp olive oil (optional, for sautéing vegetables)

Directions

  1. Cook Ground Beef: In a large pot or Dutch oven over medium heat, cook the ground beef until browned. Drain any excess fat and set aside.
  2. Sauté Vegetables: Add olive oil to the pot if needed. Sauté the onion, green bell pepper, and red bell pepper for 4–5 minutes, or until softened.
  3. Combine Ingredients: Return the cooked ground beef to the pot. Stir in the beef broth, diced tomatoes, tomato sauce, Italian seasoning, garlic powder, smoked paprika, salt, and pepper. Bring the mixture to a gentle boil.
  4. Add Rice: Stir in the uncooked rice, reduce the heat to low, and cover the pot. Let the soup simmer for 20–25 minutes, stirring occasionally, until the rice is tender.
  5. Adjust Seasoning: Taste and adjust seasoning with additional salt and pepper if needed.
  6. Serve: Ladle the soup into bowls and garnish with shredded cheese or fresh parsley, if desired.
