Directions

  2. Combine with Cereal: Quickly add the crispy rice cereal to the melted marshmallow mixture and stir until evenly coated.
  3. Form Balls: While the mixture is still warm, grease your hands lightly with butter or oil. Scoop out small portions and roll them into balls about 1 inch in diameter. Place them on a parchment-lined baking sheet.
  4. Chill: Refrigerate the balls for 20–30 minutes to firm them up.
  5. Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 30-second intervals, stirring after each interval until smooth.
  6. Coat the Balls: Dip each rice ball into the melted chocolate, ensuring it is fully coated. Use a fork to lift and let the excess chocolate drip off. Place the coated balls back on the parchment-lined sheet.
  7. Set the Chocolate: Allow the chocolate to harden at room temperature or refrigerate for faster setting.
