Directions

  3. Combine Ingredients: Return the beef to the pot. Add the diced tomatoes, beef broth, green beans, corn, peas, potatoes, thyme, basil, salt, and pepper. Stir to combine.
  4. Simmer: Bring the soup to a gentle boil, then reduce the heat to low and cover. Let the soup simmer for 45–60 minutes, or until the beef is tender and the flavors are well developed.
